Wildcat Scramble
3/4 lb cooked chorizo sausage, crumbled
1/2 cup diced onion
1 cup shredded Natural Cheddar
1 cup shredded Crimson Fire! or Hot Pepper
1 cup semi-crushed tortilla chips
1/2 cup canned green chili, diced
1 can (15 oz) black beans
1 cup sour cream
12 eggs
1/2 cup cilantro, chopped
salt and pepper to taste
Pre-Heat oven to 350° F.
Mix eggs, sour cream, salt and pepper and set aside.
Sauté onions and sausage. Drain fat and add to egg mixture and stir well.
Add tortilla chips, green chilis, black beans, cilantro to egg mixture and stir well.
Stir in cheeses to egg mixture, reserving some cheese to sprinkle on top of eggs when done cooking.
Pour into greased, oversized muffin tin.
Bake at for 20-25 minutes or until set.
Makes 12 egg muffins.
