1/2 cup butter
3/4 cup sugar
1 large egg
1 tsp vanilla
1-1/2 cups flour
1/2 tsp baking soda
3/4 tsp ground cinnamon
1/2 tsp salt
8 ounces Natural Cheddar cheese, grated (about 2 cups)
1-1/2 cups apples, cored, peeled and chopped
1/2 cup walnuts, chopped
Preheat oven to 350° F.
Cream the butter and sugar until light and fluffy. Stir in egg and vanilla. Add the combined dry ingredients, blending well. Stir in cheese, apples and nuts.
Drop by rounded tablespoonfuls onto an ungreased cookie sheet. Bake for 15+ minutes.
Remove from cookie sheet and cool on a wire rack.
