Baked Apple Cups

Dough

2 1/2 Cups all-purpose flour
3 Tbsp sugar
2 tsp baking powder
3/4 tsp salt
1 Cup shortening
3/4 Cup buttermilk
1/4 Can Natural Cheddar, grated

Apple Filling

1 1/2 tsp ground cinnamon
9 Tbsp sugar
6 Tbsp butter
6 Golden Delicious apples
1 egg white, lightly beaten

Adjust oven rack in middle position, and preheat oven to 425° F.

Mix together flour, sugar, baking powder and salt. Cut in shortening. Mix in buttermilk until dough forms. Knead onto a lightly floured surface. Roll out and cut into 12 6-inch diameter circles.

Combine cinnamon, sugar and butter in a small bowl.

Peel apples and cut in halve through equator, and remove the core. Place apple half, cut side up, in center of each dough circle. Stuff 1/2 Tbsp of butter mixture into core hole.

Bring dough up around apple and pinch closed in top center. With a small knife, cut a vent hole in top of each. *Line a baking sheet with parchment paper. Arrange apples on prepared baking sheet, and brush tops of dough with the egg white. Bake until dough is golden brown and juices are bubbling, about 20 minutes.

Put 1/12th portion of grated Natural Cheddar onto center of each apple cup. Cool on baking sheet.

Makes 12 Baked Apple Cups.
