Apple Cup Strata

7 slices extra thick sliced bread
2-3 Tbsp butter
1 small onion, thinly sliced
1 1/2 cups turkey, cut into 3/4” cubes
3 large eggs
3 cups milk
1/4 cup parsley, finely chopped
1/4 tsp ground sage
1 tsp salt
1/2 tsp black pepper
2 medium Granny Smith apples, peeled, cored and cut into 1/2 cubes
1 cup Natural Cheddar, grated

Preheat oven to 350°F. Lightly grease a 9×13” glass baking dish with butter.

Cut bread into 1 inch cubes and lightly toast. Set aside to cool.

Melt 1 Tbsp butter in a sauce pan and sauté sliced onion until clear and soft.

In a medium bowl, whisk together the eggs, milk, herbs and seasonings.

Make the layers: spread the crusty bread cubes on the bottom of the buttered baking dish. Evenly distribute the sautéed onions over the top of the bread cubes. The third layer will be the turkey, and on top of that evenly distribute the cubed apples. Evenly pour the egg mixture over the layers. Sprinkle the cheddar over the top of the strata.

Bake for about 45 minutes, or until the top is golden brown and the custard is set. Let sit for 5 minutes before cutting.
